Kids Recipes

As a mum I know how hard and frustrating it is to find quick and easy, mostly healty snacks and meals for my children. So in this section you will find some tried and true recipes that your children should love.

TO MAKE ANY RECIPES DAIRY AND EGG FREE:

Replace Milk: Soy or Rice Milk
Replace Egg: Orgran Egg replacer or 1T Golden syrup= 1 Egg
Replace Butter: Olivani Margarine or other dairy free spread
Replace Chocolate Chips with Dairy free Dark Choc Chips (Pams are dairy free)

Easy Honey Rice Bubble Cakes

125g Butter
2 Tbsp Honey
3/4 cup white sugar
5 cups Rice Bubbles
Add the butter, honey and sugar to a medium sized sauce pan and heat on the stove. Mix and bring to the boil. Leave till golden brown, ( about 3 minutes).
Remove from the heat and add the rice bubbles. Mix very well.
Press into a slice dish, or if you are doing a big quantity use a roasting dish. (or roll little balls and put in cupcake wrappers)
Leave to set. then slice into squares while still sticky.
Keep in the fridge.

Hash Browns

1/4 c. finely chopped onions
1/4 tsp. salt
3 medium potatoes (1 lb.) such as russet or yellow
3 tbsp. butter
1/8 tsp. black pepper
Method
Peel potatoes and coarsely shred them. You should have about 3 cups.
Rinse the shredded potatoes and pat dry well with paper towels - or dry in a salad-spinner.
Combine the potatoes, onion, salt and pepper.
Melt butter in a large skillet over medium heat.
Using a spatula, pat potato mixture into skillet, reduce heat to medium-low, and cook about 10 minutes or until bottom is crisp.
Cut into 4 wedges and turn. Cook another 8 to 10 minutes or until golden and the potatoes are cooked. Serve.
Tips & Warnings
You can use a non-stick skillet, but if you do, don't use a knife to cut the potatoes into wedges. You'll ruin the non-stick surface. Use a plastic utensil, such as a pancake turner. Or don't bother cutting it into wedges at all; try to flip the whole shebang as is. Even if it falls apart, it will still taste good.

Wash celery and cut into pieces, spread peanut butter in the u shape.
put raisin in the peanut butter.

Corn Fritters

¾ cup flour
1 tsp baking powder
½ tsp salt
Black pepper
1 egg
440g can cream style corn
2 Tbsp oil
Sift flour, baking powder and salt and pepper to taste in a bowl.
Add egg and mix to combine.
Stir in sweat corn.
Heat oil in frying pan.
Cook until golden then turn over and cook other side. Drain on absorbent paper. Serve hot.

English Muffin Pizza

1 split English muffin
Pizza sauce
Pizza cheese (grated)
Toppings: mushrooms, pepperoni, green pepper, pineapple, bacon...etc
Toast your English muffins.
Spread pizza sauce evenly on muffin halves and sprinkle cheese on top. Add the toppings!
Put on tray and put into toaster oven set on broil.
Cook for about 5 to 10 minutes

MUESLI BARS

¼ lb butter
1 Tbsp honey
1 cup rolled oats
1 cup coconut
½ cup wheat germ
Fruit and nuts
Melt butter and honey slowly for 5 - 10 minutes.
Then add dry ingredients.
Press into a tin and cut into bars.
Set in fridge.

PIKELETS

1 cup self-raising flour
¼ tsp baking soda
2 Tbsp caster sugar
1 egg
½ cup milk
2 tsp oil
Sift flour and soda together in large bowl. Stir in sugar.
Mix well and add combined egg, milk, and oil. Whisk to make smooth batter.
Fry in frying pan.

Vanilla Cupcakes...

1 1/2 C White Flour
3/4 C Sugar
2tsp Baking powder

melt in separate bowl:
100gm butter

add 2 eggs and
1C milk
mix till smooth, then add to dry ingredients

Put into cupcake papers and bake 10-12 mins @180deg C

or Cake time for 20-30 mins

Ice when cold..

For something different add
1C White Choc and 1C Frozen raspberries... yummy!

Chocolate Chip Cookies...

1 C Butter (250gm)
1 C Sugar
1 C Brown Sugar

Beat until Pale and Creamy
Then ADD:
2 Eggs
2 T Hot Water
2 tsp Vanilla Essence

Beat until Fluffy
The ADD:

3 1/4 C White Flour
1 tsp salt
1tsp baking soda

Stir in

1-2 C Chocolate Chips (or raisins, nuts fruit etc)

Drop Teaspoonfuls of mixture onto a baking tray and cook for 180deg C for 8-10 Minutes

Pikelets...

2C White Flour
3/4 C Sugar
2 tsp Baking powder
1T melted butter
1 egg
1- 1 1/2C milk
vanilla ess
pinch salt

mix all ingredients till smooth

put spoonfuls (small if you have little ones) of mixture into a hot frying pan
turn over when bubbles appear on the top
serve with jam or other topping.

Caramel Slice (thanks Louisa Webber)

3 weetbix
1 cup flour
1 cup coconut
3/4 cup sugar
1 tsp baking powder
125gm butter (melted)

3/4 can condensed milk (i just used a whole can)
1 tbsp butter
1 1/2 tbsp golden syrup

choc icing (i used whittaker's dark block melted and poured on)

Place all dry ingredients in a bowl, mix in melted butter. Press into sponge roll tin.
Bake 12-15 mins at 180c.
Stir condensed milk, butter & golden syrup together in pot until blended.
Pour onto base then return to oven for 3 - 5 mins.
Ice while warm with choc icing.

Yum yum!

A note - I've made this twice and the second time I found it MUCH easier to remove & cut the slice if I lined the tin with baking paper.

Gingerbread Men (makes around 24)

I've tried this one and it works really well. a nice chewy gingerbread man (if you dont over cook them)
Melt in a saucepan and bring to the boil. then take off the heat.
6 Tbsp Golden Syrup
2 Tbsp Water
3 tsp ground ginger
150g sugar
Add and mix well
150g butter
1tsp Baking Soda
Then add
5-6 cups flour (start with a bit less so its not too crumbly - remember you can always add more)
Mix well and then kneed on a floured board/bench.
Roll out and cut out shapes.
Cook at 150*C for around 10 min ( I had two trays going at a time so I did 4 mins, then swapped them around, so each got a turn at being on the top and bottom)
Wait till cool, then ice.
